SAUSAGE CHEESE BALLS

1 lb sausage 2 c. shredded sharp cheddar
3/4 c. biscuit mix 1/4 c. chopped onion
1/4 c chopped celery 1/4 tsp. garlic powder
Preheat oven to 375 degrees. Mix all ingredients. Form
into 1 in balls. Bake 15 min. or until golden brown on
ungreased cookie sheet. Makes about 3 dozen. Sausage
cheese balls can be frozen, uncooked.

PHILLY BURGERS

Saute onions, peppers, & mushrooms
Top hamburgers with veggies & mozzarella cheese.
Spread Italian dressing on buns


STUFFED BURGERS

1 beaten egg 1/2 tsp salt
1/8 tsp pepper 1/4 C bread crumbs
1 T milk 1/2 tsp basil, sage, or oregano
1 lb beef 1/4 C green peppers or mushrooms, or cheese

Place patties on unheated rack of a broiler pan 3 inches from heat for 15-18 min. (no pink left)

PORCUPINE MEATBALLS

1 1/2 lb. lean ground beef 1/2 C uncooked rice
2/3 C milk 1 med onion, chopped
1 1/2 tsp salt & 1/4 tsp pepper
1 can condensed tomato soup
3/4 C water 2 tsp green pepper (opt.)

Combine first 6 ingredients. Form into balls & place in 13 x 9 baking dish. Combine soup and water and pour over meat. Cover tightly with foil. Bake 1 hr @ 350¢Xƒn

GRAPE JELLY MEATBALLS

1 - 2 lbs ground beef 1/2 C bread crumbs
1/3 C minced onion 1/4 C milk
1 egg
1 T parsley
1 tsp. salt & 1/8 tsp. pepper
1/2 tsp. Worcestershire sauce

Mix well & shape into balls. Brown 350 oven about 25-30 min. Turn halfway through. Drain.

Sauce: 1 (12 oz.) bottle of chili sauce & 1 (10 oz.) jar of grape jelly. Heat together until melted, stirring. Simmer uncovered about 30 min, turning. Or put all into crock pot. The longer they cook the better they are.


HAMBURGER HASH BROWNS

1 bag frozen hash browns, thawed
1 can French Fried Onions
salt & peper & 3 T oil
1 C shredded cheddar cheese
1 pkg. brown gravy mix, prepared
1 lb hamburger

1. Brown hamburger, add prepared gravy mix, add 1/2 C cheese & 1/2 can F.F. onions
2. Toss hash browns in oil; sprinkle salt & pepper in 9 x 13 pan. Bake @ 400 for 15 min.
3. Spread hamburger mixture over hash browns and sprinkle remaining cheese & onions.
4. Bake a few more minutes to melt cheese


PARTY POTATOES

32 oz hash browns, thawed
16 oz. sour cream
1 med onion 1 green pepper
8 oz. cheddar cheese
2 cans cream of celery soup
Chips on top
1/2 stick of butter (optional)

1 hour @ 350 not covered.

HAM BARBECUE

1 lb chipped ham 2 tsp. mustard
1 C ketchup 1 T Worcestershire sauce
1 T vinegar saute onions & peppers
1 T brown sugar 1 T water
salt & pepper (opt.) Cook on low heat.

PORK CHOPS -- SLOW COOKER

lean pork chops, 1 inch thick 1 tsp dry mustard
1/2 C flour
1/2 tsp garlic salt
1 tsp Salt
2 T shortening
1 can cream of chicken or mushroom soup

1. Mix flour, salt, mustard, and garlic salt, and coat chops
2. Heat shortening in skillet and brown chops.
3. Place in cooker and add soup.
4. Cook on low 6-8 hours or on high 3-4 hours.

CALICO BEANS

1/2 lb. ground meat 3/4 C. brown sugar
1/2 lb. bacon 1/2 C. sugar
1 C onion 1 can butter beans
1/2 C catsup 1 can pork & beans
1 tsp. salt 1 can kidney beans
1 tsp. mustard 1 can lima beans
2 tsp. vinegar 1 small pepper

Brown meat and drain. Add remaining ingredients. Bake in
greased casserole. 350° for 40 minutes to 1 hour (or crockpot) This is good for party. Serve alone or with tortilla chips for dipping.

SPEEDY BAKED BEANS

6 slices bacon, diced 1/3 C chili sauce
1 C minced onion
1 1/2 tsp prepared mustard
3 cans (19 oz. ea.) baked beans w/pork

Cook and stir bacon and onion until bacon is crisp.
Stir in remaining ingredients. Pour into ungreased 2-quart casserole. Bake 350°uncovered 45 minutes (or crockpot) until hot and bubbly.

Speedy Baked Beans with Ham: Add 1 C cut-up cooked ham.

DEER STEAK -- SLOW COOKER

1 1/2 - 2 lbs steak
10 oz. cream of mushroom soup
1 pkg. onion soup mix
1/4 C milk

Place steak in slow cooker and cover onion soup mix.
Mix milk and mushroom soup together and pour over steak.
Cover and cook on low heat for 8 to 10 hours.

STUFFED HOTDOGS

6 slices of bacon, cooked, diced
2 cans crescent rolls
1/2 C chopped celery
1/2 C chopped onion
1/2 C ketchup
8 cheese hotdogs

Saute celery and onion. Mix together with diced bacon and ketchup. Cut hotdogs in half. Then slice each hotdog piece, not cutting the whole way through. Spoon filling into hotdogs. Wrap each hotdog in a triangle of crescent roll. Bake at 400° for 10-15 min, until golden brown.


BACON CHEESEBURGER PASTA

8 oz tube or spiral pasta 1 lb ground beef
6 bacon strips, diced 1 can tomato soup
1 C shredded cheddar cheese

Cook pasta. Brown meat, drain. In same skillet, brown bacon and chop. Mix ingredients except cheese. Heat through. Sprinkle with cheese and cover and heat until melted.


CHICKEN STUFFING CASSEROLE

4-6 C cooked & chopped chicken breast
2 cans cream mushrooms soup
(mix with) 1 C sour cream
1 pkg. Stove Top stuffing (prepared)
1 pkg. cheddar cheese

Layer in casserole dish as listed above.
Bake @ 350° until bubbly.


ALMOND CHICKEN CASSEROLE

2 C cubed chicken (2 breasts) 2 C celery
2 tsp chopped onion 1 C mayo
1/2 C cheddar cheese 1/2 C sliced almonds
2 tsp lemon juice dash Worcestershire sauce
1 tsp salt 1 C Italian bread crumbs
1/2 C broth (from chicken breast)
Sprinkle on top: garlic salt, chips, seasoned salt
Bake 350° until bubbly


SAVORY RICE

2 C uncooked regular rice
1/2 C butter softened
32 oz chicken broth made with bouillon
(or 2 cans broth & 1 can water)
chopped onions
1 tsp. salt
1/2 C butter, softened
2 cans mushrooms, drained

In ungreased 9 x 13 dish casserole, mix all ingredients. Cover. A smaller dish will make it hard to stir. It will be very full. Bake 45 min. if you are not serving right away. It will dry up some. Bake 1 hour if serving immediately.


CHEESY SLOPPY JOES

1 lb ground beef 1/3 C chopped onion
1 can tomato soup 1/2 tsp chili powder
1/4 tsp salt dash pepper
1/2 cup shredded cheese

SLOPPY JOES

Buy a can of sloppy Joe sauce.
Add chopped onions and peppers.
Add some brown sugar, ketchup, mustard.
Heat on stove top or crockpot.

SPINACH SALAD

Spinach
raw mushrooms (optional)
Diced Bacon
chopped eggs
Best served immediately while bacon and eggs are
slightly warm.

Dressing: (or favorite dressing)
1 C. oil 1/2 C sugar
1/3 C ketchup 1/4 C vinegar
1 small onion dash of salt

7-LAYER SALAD

9 x 13 container:

Lettuce
Onions
Celery
Frozen peas / thawed (not cooked)
1/2 C Mayo & 1/2 C Miracle Whip
Bacon Bits

TUNA NOODLE CASSEROLE

Mix together in 2-qt casserole:

6 oz. cooked ruffle noodles & 1 can of tuna
Mix 1 can of celery soup & 1/2 C milk; pour over noodles
Top with 1/3 C buttered bread crumbs (optional),
shredded cheddar cheese, and crushed chips.

Bake 350° for 20 minutes uncovered


ONION POTATOES
1 env. onion soup mix
2 lbs. potatoes, cut in chunks
1/3 C oil

In large plastic bag, add all ingredients. Shake until coated evenly. Place in shallow baking pan. Bake, stir occasionally, 40 minutes, 450° or until tender and golden brown.


GREEN BEAN CASSEROLE
1 can French fried onions (2.8 oz)
2 cans canned beans
3/4 C milk
1 can cream of mushroom soup
1/8 tsp pepper

Mix all ingredients and 1/2 can onions in 2 qt. dish. Bake uncovered 350° for 30 min. Top with remaining onions. Bake additional 5 minutes or until onions are golden brown.

VEGETABLE PIZZA

2 pkgs. crescent rolls Chop your favorite vegetables
2 pkgs. cream cheese 3/4 C sour cream
pkg. Ranch mix (dry)

Press together and spread rolls on cookie sheet.
Bake @ 375 for 8 minutes. Mix ingredients and spread
on dough after it cools. Add vegetables. Chill for 5 hours. Cut into squares.


POTATO PUFFS

2 eggs 1/2 C flour
1/2 tsp. salt 1 C mashed potatoes
1 tsp. baking powder 1/2 C grated cheese

Beat eggs well. Add ingredients. Form into patties and fry into hot oil.

ONION RINGS

onions, sliced into rings 3/4 tsp. oil
1 egg separated 3/4 C flour
3/4 C milk 1/2 tsp. salt
3/4 tsp. baking powder

Beat egg yolk. Add milk, oil, and dry ingredients. Beat egg white until stiff. Fold into milk mixture. Dip onion rings into batter. Fry a few at a time in oil. Drain on paper towels. Sprinkle with salt. Keep warm in oven.

BARBECUE BEEF CUPS

3/4 pound hamburger 1 package refrigerator biscuits
1/2 C barbecue sauce 1/3 C shredded cheese
1 T minced onion

Preheat oven to 350°, Grease muffin pan Brown hamburger, drain; mix in barbecue sauce and minced onion
Put biscuits in muffin pan; top with hamburger mixture
Bake for 10 minutes; sprinkle with shredded cheese
Bake for 3 more minutes


STUFFED MUSHROOMS

1 lb ground beef 1 T parsley
2 lbs fresh mushrooms 1 tsp basil
stems removed, chop some, reserve 2/3 C bread crumbs (from can)
1/4 C margarine 2 slices crumbed bread
1/2 C chopped peppers 2 C shredded cheddar cheese
2 tsp minced onion

preheat oven to 400°; brown meat, drain; Saute mushroom stems, peppers, garlic, parsley, basil in butter; Mix everything together. Place mushroom caps, upside down, in large baking pan. Over-stuff each cap with mixture. Bake for 20 min until golden brown.

RICE & BROCCOLI CASSEROLE

1 onion chopped 2 cans mushroom soup
1 large jar Cheese Whiz or 1 jar of Ragu Cheese sauce
2 pkg. (10 oz) frozen broccoli
1 C rice (uncooked)

Cook rice and broccoli. Saute onion in butter. Mix all together. Pour into buttered casserole dish and bake at 350° for 20 minutes.


RANCH CHEESE BALL

1/2 pkg. dry ranch salad dressing
4 oz. cheddar cheese
1/4 C mayonnaise or salad dressing
1 pkg. cream cheese
2 T milk chopped walnuts

Set out cream cheese to soften. Mix ranch dressing, mayonnaise and milk with mixer. Add cream cheese and cheddar cheese. Mix for 1 minute until blended. Roll in chopped nuts. Makes one baseball-sized cheese ball. Serve with crackers.


CHICKEN CHEESE BALL

1 (5-oz) can chicken (white)chopped onion
1 pkg. cream cheese
1/4 tsp garlic powder

Mix all ingredients. Roll in chopped nuts or parsley flakes. Makes one ball.


STUFFED PEPPERONI MUSHROOMS

1/2 C. chopped peppers & onions
2 lbs. fresh mushrooms
1/2 tsp. salt
1/4 tsp. oregano
1 C diced pepperoni
12 to 16 Ritz crackers, crushed
3 T. parmesan cheese
1/3 C diced mushroom stems
1/3 C chicken broth (can make with bouillon cube or from can.)
3 T butter

Melt butter and saute pepper, onion, and mushroom stems.
Drain and add other ingredients. Mix well & fill cups.
Bake @ 350° for 35 to 40 minutes.


TWICE BAKED POTATO CASSEROLE

6 med. potatoes, baked, cut into 1 inch cubes
1 pound bacon, cooked, crumbled
salt & pepper
16 oz. sour cream
4 oz. mozzarella cheese
4 oz. cheddar cheese
chopped onions (optional)

Spray 9 x 13 baking dish. Place potatoes in dish
and sprinkle with salt and pepper. Top with bacon
and cheeses and bake @ 350° for 20 minutes.

CHICKEN PARMESAN

Preheat oven to 350°
Dip chicken in egg and milk mix parmesan cheese and bread crumbs together and coat chicken brown chicken in frying pan
in baking dish add sauce on bottom, layer chicken, bake for 20 minutes sprinkle mozzarella cheese on top bake another 5 minutes
